Smokey Tofu Breakfast Scramble--flavorful, healthy start to the day


  • 14 oz firm tofu sliced
  • 1 cup minced onions
  • 1 tsp sea salt
  • 1/2 tsp black pepper
  • 1 cup cooked sweet potatoes
  • 1/2 cup minced red and yellow peppers
  • 1 tsp smoked paprika
  • 1/2 tsp garlic granules
  • 1/2 tsp red pepper flakes
  • 1 1/2 cup sliced cooked white potatoes
  • 3 tbsp. olive oil


  1. Saute tofu and onions in olive oil.
  2. Add spices.
  3. Add sweet potatoes, white potatoes and peppers and simmer for 10 minutes.
  4. Sprinkle red pepper flakes if you like more heat in your tofu.
