Homemade Instant Pot Vegan Kefir has become increasingly popular around the world, mainly because of its probiotic and nutraceutical properties. Here, I made homemade kefir in the Instant Pot with only two ingredients–soy milk and kefir starter. Start the Instant Pot in the evening, and by morning, it is done and ready. The result is fresh, creamy and delicious kefir that is vegan, gluten free and dairy free. Toss in fruit, almond butter and hemp seeds, and you have the perfect breakfast smoothie.
Homemade Instant Pot Yogurt. It would seem that it wouldn’t be that difficult to find good yogurt without any additives, preservatives, chemicals, unnecessary sugar or other junk that I don’t want. I like plain, thick yogurt that I can add my own fruit to. Yes, it takes 15 hours, and then if you want it thick, you have to strain the water, but if you plan ahead, it is so very easy.
Instant Pot Barbecue Jackfruit. The main purpose of cooking food in the Instant Pot some would say, is to have your food ready quickly. This recipe definitely accomplishes that goal. An additional benefit that you notice when you eat Instant Pot food however, is that the food is tender and juicy and the flavor seems greatly enhanced by the pressure cooking. You can cook a variety of food in the Instant Pot, and this jackfruit is the perfect food. The spices, the chili peppers in adobo sauce marinate and the jackfruit is steeped with flavor. The perfect dish to confirm that you are not deprived eating vegan, vegetarian, gluten free and dairy free.
Instant Pot Kale Tomato Risotto. The thing that I love about risotto is that it is so smooth and creamy, not like regular rice. In this dish, we combine the risotto with roasted tomatoes, chiles, kale, mushrooms, and the result is definitely delicious. Toss the risotto in the Instant Pot, and saute the vegetables either in a separate pan, or in the Instant Pot after the risotto is finished. Either way, you are eating deliciousness in 30 minutes!
