Sesame Ginger Tofu Kabobs.  It is spring now, and before long, it will be grillin’ time.  To get a start on summer, I created a sesame ginger marinade that is amazingly flavorful and delicious.  Starting with tofu, and adding fresh seasonal vegetables and fruit, this marinade transforms them from ordinary to delectable.  You have the option of preparing your tofu and vegetables as kabobs on skewers and grilling them, or if you are short on time, you can stirfry on the stovetop.  Either way, you will not be disappointed and this dish will definitely be a favorite this summer.  Vegan, gluten free and dairy free.

Grilled Pineapple Slaw

Grilled Pineapple Slaw.  It is spring time now, and it wont be long before we are diving into those summer barbecues.  There is no food that goes better with summer barbecue than slaw, and slaw has many flavors and variations.  This is a sweet slaw, using grilled pineapple, purple cabbage and a cilantro lime dressing.  The carmelization of the maple syrup on the pineapple on the grill is yummy.  So many delicious flavors in this combination.  This dish is  the perfect for a side dish for any main course that you are serving.  Vegan, gluten free, dairy free.

Vegan Dip and Veggie Platter

Vegan Dip and Veggie Platter.  There are so many occasions that I just want a snack, not a whole meal.  I want that snack to be delicious, nutritious, and even healthy.  This platter features four vegan dips, Toasted Pumpkin Seed Dip, Jalapeno Guacamole, Black Bean Dip and Basil Hummus.  I added fresh veggies and fruits and the best gluten free crackers that I have found to round out the platter.  If served as a meal, it contains all of the protein, fiber, vitamins and minerals that you need and it takes only 30 minutes to prepare all of the dips and cut the veggies.  Then, it is time to snack away!  Vegan, gluten free, dairy free.
