Ingredients

Jackfruit

  • 1 can of jackfruit not packed in syrup
  • 2 to matoes chopped
  • ½ onion chopped
  • 4 cloves garlic minced
  • ¼ cup sriracha sauce
  • 1 teaspoon smoked paprika
  • 2 tablespoon olive oil
  • 1 teaspoon sea salt
  • 3 tablespoon maple syrup

Cashew Garlic Sauce

  • 1 cup cashews soaked
  • 4 cloves garlic
  • juice of 1 lemon
  • 2 teaspoon lemon zest
  • teaspoon sea salt

Tacos

  • 6 Corn tortillas
  • 2 cups picked cabbage
  • 1 avocado
  • Portobello Mushroom if desired

Instructions

Jackfruit

  • Saute onion and garlic in olive oil.
  • Add tomatoes, maple syrup, spices and sriracha sauce and simmer for 30 minutes.
  • Pull jackfruit apart with fork.

Cashew Garlic Sauce

  • Blend all ingredients in blender

Tacos

  • I added pickled cabbage and avocado to grilled corn tortillas and the jackfruit and topped with cashew garlic sauce. I also grilled a portobello mushroom bun and added the same ingredients.
