Ingredients

  • 1 cup of arborio rice
  • 1 cup of water
  • 1 cup of vegetable broth
  • 2 teaspoon sea salt
  • 1 teaspoon black pepper
  • 3 cups of baby broccoli chopped (fresh if possible)
  • juice of 1 lemon
  • 1 teaspoon lemon zest
  • ½ onion chopped
  • 4 cloves garlic minced
  • 1 lemon sliced

Instructions

  • Toss all ingredients in instant pot. Top with sliced lemon. Set to high pressure for 4 minutes. Let steam NR, naturally release.

Stovetop

  • Toss all ingredients in soup pot. Top with sliced lemon. Bring to boil and simmer 30 minutes, or until rice is cooked.
  • Stir rice and broccoli together and serve.
