Ingredients

Stirfry

  • 3 cups of organic shredded red and green cabbage
  • 3 cups of power greens kale, chard and spinach
  • ½ cup of sliced green onions
  • ½ cup shredded carrots
  • 2 tablespoon coconut oil
  • 1 teaspoon sea salt
  • ½ cup of Cooked Jasmine Rice for each serving

Hot Peanut Dressing

  • ½ cup peanut butter
  • ¼ cup coconut aminos
  • ¼ cup maple syrup
  • Juice of 1 lime
  • 1 tablespoon lime zest
  • 4 cloves garlic
  • 1 teaspoon sea salt
  • 1 tablespoon red curry paste

Instructions

Stirfry

  • Saute all vegetables in coconut oil.
  • Add sea salt.

Hot Peanut Dressing

  • Blend all ingredients in high speed blender
  • Cook Jasmine Rice according to package directions
  • To Serve: Top vegetables with rice and drizzle hot peanut sauce. Garnish with cilantro.
