Ingredients

  • ¾ cup arborio rice
  • 1 15oz can coconut milk
  • ½ teaspoon vanilla
  • 1 teaspoon lemon juice juice of 1 lemon
  • ½ cup shredded coconut
  • 1-½ cup water
  • ¼ cup maple syrup
  • ½ teaspoon sea salt
  • 1 tablespoon pomegranate seeds for garnish

Instructions

  • Add all ingredients to Instant Pot.  Pressure Cook for 20 minutes.  Let steam release naturally and remove lid.
  • Stir coconut pudding.  If you prefer a smooth pudding, blend with small hand blender.  Serve topped with pomegranate seeds
