Ingredients

Salad

  • 1 cup rice noodles cooked and chilled
  • 10 green onions chopped
  • 1 cup purple cabbage chopped
  • 1 red pepper chopped
  • 2 cucumbers chopped
  • ½ cup shredded carrots
  • 1 tangerine peeled and chopped
  • ½ cup cilantro
  • chopped almonds for garnish

Cilantro Cashew Dressing

  • ½ cup cashews soaked
  • ½ cup water
  • 2 tablespoon maple syrup
  • pinch salt
  • ½ cup cilantro
  • juice of 1 limes
  • 1 teaspoon lime zest

Instructions

Salad

  • Mix all salad ingredients well in bowl. Add dressing as needed and sprinkle with chopped almonds.

Cilantro Cashew Dressing

  • Mix all ingredients well in blender
  • I use a Nutri Bullet (see Resource Page if you don't have one) to blend this dressing so that it isn't all stuck in the bottom of the Vitamix.
