Mulberry Oat Bars With Coconut Maple Glaze

Mulberry Oat Bars With Coconut Maple Glaze. When you have a sweet tooth, but don’t want the artificial colors, preservatives and additives that are found in many  processed bars, you can make your own delicious mulberry oat bars with coconut maple glaze and have a dessert that is totally additive free. These bars are vegan, gluten free and dairy free, and  have so many good and healthy ingredients that you will absolutely love.

Mulberry Oat Bars

Prep Time: 1 hour, 20 minutes

Total Time: 1 hour, 20 minutes

Yield: 15 bars

Serving Size: 1 bar

Mulberry Oat Bars

Ingredients

    Bars
  • 2 cups of gluten free oats
  • 1 -1/2 cup gluten free granola ( I used Udi's)
  • 1/2 cup dried shredded coconut
  • 1 tbsp chia seeds
  • 1/2 tsp sea salt
  • 1/2 cup peanut butter
  • 1/2 cup maple syrup
  • 2 tsp vanilla
  • 1/2 cup dried mulberries (or whatever dried berries you prefer)
  • Coconut Glaze
  • 1 cup of raw cashews
  • 1 cup of water
  • 1/2 tsp sea salt
  • 1/2 cup dried shredded coconut
  • 1/4 cup maple syrup

Instructions

    Bars
  1. Mix all ingredients in 1 bowl.
  2. Microwave for 1 minute. Stir until all dry ingredients are mixed.
  3. Lightly brush coconut oil on bottom of 9x13 pan, or line pan with paper; pour ingredients into pan and press.
  4. Freeze for 1 hour.
  5. Coconut Glaze
  6. Blend all ingredients in high speed blender.
  7. After freezing bars for 1 hour, pour coconut glaze on bars and freeze for another hour.
  8. Slice into 15 bars and serve. Store left over bars in the freezer because they will melt if left out for too long.
