Matcha Chia Breakfast Parfait.  One of the the most important things to me in pursuing a super healthy lifestyle, is that I don’t want to feel deprived.  I want to enjoy my food and look forward to making and eating recipes that excite me.  I don’t care about eating meat, or even chips, but sugar and chocolate, well, I love them.  This breakfast parfait has so much nutritional value and has a little sweetness  to make it feel like you are seriously eating dessert for breakfast.  Vegan, gluten free, dairy free.

Matcha Chia Breakfast Parfait

Start the day off with this beautiful and nutritious Matcha Chia Breakfast Pudding. Vegan, gluten free, dairy free.

Ingredients

    Layer 1Chia Pudding
  • 1 cup almond milk
  • 1/4 cup chia seeds
  • 2 tbsp maple syrup
  • 1 tsp vanilla powder
  • 1/2 tsp sea salt
  • Layer 2 Matcha Coconut Yogurt
  • 1 cup cultured coconut yogurt
  • 1 tsp matcha
  • Layer 3 Cultured Coconut Yogurt
  • 1 cup cultured coconut yogurt
  • 1 Kiwi, peeled and sliced
  • Toppings
  • 2 tbsp Cacao Coconut Crisps
  • 2 tbsp Goji Berries

Instructions

  1. Mix all ingredients for chia pudding in bowl; let set 30 minutes
  2. Insert Kiwi around edge of glass
  3. Add layer 1 Vanilla chia pudding
  4. Add layer 2, Matcha Coconut Yogurt
  5. Add layer 3 Coconut Yogurt
  6. Sprinkle cacao coconut crisps and goji berries on top

  8. If your chia pudding is already prepared, your prep time will be 15 minutes.
