Maple Coconut Risotto Pudding.  This Instant Pot dessert, is quick, easy, requires few ingredients, and is incredibly smooth and delicious.  Toss all of the ingredients into the Instant Pot, pressure cook for 20 minutes, and you have a slightly sweet, creamy dessert that will please the crowd.  Vegan, gluten free and dairy free.

  • 3/4 cup arborio rice
  • 1 15oz can coconut milk
  • 1/2 tsp vanilla
  • 1 tsp lemon juice juice of 1 lemon
  • 1/2 cup shredded coconut
  • 1-1/2 cup water
  • 1/4 cup maple syrup
  • 1/2 tsp sea salt
  • 1 tbsp pomegranate seeds for garnish


  1. Add all ingredients to Instant Pot.  Pressure Cook for 20 minutes.  Let steam release naturally and remove lid.

  2. Stir coconut pudding.  If you prefer a smooth pudding, blend with small hand blender.  Serve topped with pomegranate seeds
