Sweet Potato Kale Bowl

Sweet Potato Kale Bowl.  The easiest and healthiest dish that you can make for any meal, is a bowl.  Toss in all the nutritious ingredients that you have in the fridge, and your options for deliciousness are endless.  This bowl features spiralized sweet potatoes and fresh kale. (which I grew myself)  There is nothing that tastes better than growing your own vegetables and herbs.  If you don’t have a big yard like I don’t, check out this organic patio garden that I planted–I love this.  All of my herbs and some vegetables come from my very own patio!

To make this bowl, I topped the bowl with my favorite garlic cashew creme for tangy flavor, and it was done and yummy in less than 30 minutes.  Use whatever vegetables you have on hand…bowls are packed with nutrition and flavor. Vegan, gluten free and dairy free.

Crispy Tofu Stirfry

Crispy Tofu Stirfry.  Tofu is always best when it is crispy, and when you add crispy tofu to stirfry vegetables and top with spicy curry simmer sauce, the result is amazingly delicious.  This dish is ready in less than 30 minutes, and is off the charts flavorful and filling.  Vegan, gluten free and dairy free.

Chile Lime Jackfruit Bowl.  It is summer, and that means grilling season.  Even vegans like to grill food, and this chile lime jackfruit has enough kick to be the star of this bowl!  Chile lime seasoning adds heat and the grilled vegetables add nutrition and flavor–the result is a delicious, filling, easy, ready in 30 minutes, dish.  Vegan, gluten free, dairy free.

Instant Pot Kale Tomato Risotto

Instant Pot Kale Tomato Risotto.  The thing that I love about risotto is that it is so smooth and creamy, not like regular rice.  In this dish, we combine the risotto with roasted tomatoes, chiles, kale, mushrooms, and the result is definitely delicious.  Toss the risotto in the Instant Pot, and saute the vegetables either in a separate pan, or in the Instant Pot after the risotto is finished.  Either way, you are eating deliciousness in 30 minutes!  Risotto for breakfast?  Eggs for dinner?  Hey, why not.  This dish is vegan, gluten free, dairy free, or vegetarian with eggs.
