Thai Vegetable and Noodle StirFry

On those busy nights where you need dinner, but have nothing ready, you can whip up this Thai Vegetable and Noodle Stirfry with what you have.  Here, I used cabbage, green onions, carrots, sprouts, baby broccoli, spices and a hot almond red curry sauce.  The result was yummy, and the best part is, it was ready in less than 30 minutes!  Vegan, gluten free, dairy free.

Instant Pot Blackberry Jam

Instant Pot Blackberry Jam.  I love recipes that have all natural ingredients, with no chemicals, additives or preservatives.  For this reason, I like to make my own jam, sun dried tomatoes and fruits, and try to buy organic whenever possible.  Honestly, making jam in the Instant Pot is so, so easy, only requires 4 ingredients and cooks for 2 minutes!  Do you have fresh blackberries, maple syrup, lemon juice and flax meal in the house?  That is all you need–the result is delicious, fresh, tasty and easy.   Homemade jam doesn’t taste at all like jam from a jar!   You can use this jam on a variety of breads and crackers, but I found that it is perfect on No Knead Bread from @pinchofyum.  I have modified the recipe to make it gluten free, and seriously, this fresh bread and fresh homemade jam–well that is a match made in heaven.  Vegan, gluten free and dairy free.

Instant Pot French Apple Cobbler.  When you are in the mood for a dessert that has all the deliciousness of cobbler, this is the dish for you.  When prepared in the Instant Pot, you can toss all the ingredients into your bowl, and set it and forget it.  You will have delicious, creamy, fruity French Apple Cobbler in less than one hour.  Top with your favorite nice cream!  Perfect for that special treat, or fancy enough for the holiday dessert table.  Vegan, gluten free and dairy free.

Grilled Macrobiotic Bowl

Grilled Macrobiotic Bowl.  We love fresh produce and everything green here.  There are many restaurants in LA that specialize in raw, vegan and vegetarian organic food.  I frequent those restaurants whenever I can, and it is always an (expensive) dream meal.  One of my favorite dishes is a macrobiotic bowl which features grains, fermented food, and sea vegetables. Today, I created a homemade version of the macrobiotic bowl so that I can enjoy it whenever I have the craving.  Now, you can enjoy one too.

What is macrobiotic, and why do I want to eat that way?  Generally speaking a macrobiotic diet involves eating primarily a plant based diet and combination of nutrients to obtain a yin-yang energy balance in the body.  I love these bowls, and definitely feel better after I eat one.  This bowl adds to the deliciousness of a macrobiotic bowl by grilling the ingredients and then topping with Garlic Cashew Creme.  This dish is vegan, gluten free and dairy free.
