Blueberry Banana Nice Cream.  It is amazing how nice cream made from fresh fruit tastes so much better than traditional dairy ice cream.  Blueberries, frozen bananas, topped with all the goodies that you have in the pantry, and you will have an awesome parfait.  Feel free to mix it up with other fruits, and toppings–makes for a perfect nice cream bar for kids.  It is healthy, delicious, vegan, gluten free and dairy free.

Summer Salad

Summer Salad.  Summer is here, and we have all of this beautiful produce to create amazing salads….so many colors  and choices to toss into your bowl!  To give this salad more substance, we added rice noodles to the greens.  They  take on the flavor of the surrounding vegetables or dressing to give you a filling and satisfying meal.  You can choose the Cilantro Cashew Dressing or the Almond Butter Dressing, depending on what you are craving at the moment!  Vegan, gluten free, dairy free.

Spicy Smoked Vegan Taco With Garlic Cashew Cream.  I think that the best food can be found inside of a taco.  There are so many varieties of tacos, and they can be tossed together quickly with whatever ingredients you have on hand.  Since going gluten free, corn tortillas have been essential to my feeling that I can still love food without being deprived.  Staying with my main theme of trying to fit as much nutrition into a square inch as possible, I have combined cauliflower, sweet potatoes and brussel sprouts for a delicious and filling taco base.  We have spiced it with with garlic, smoked paprika, chipotle and the best fats–avocado and cashews.  I had no idea how they were going to turn out, but seriously, these tacos bring the flavor.

Cauliflower Crust Pizza

Cauliflower Crust Pizza.  On a gluten free diet, the first thing I missed was pizza.  In 2008, there were not many gluten free options, and a gf diet was much more restrictive.  Today, many companies have embraced the alternatives, and that makes eating favorites so much easier.  In this case, a cauliflower crust pizza isn’t really a substitute for a gluten pizza.  This pizza is delicious all on it’s own, and eating it is a delicious treat when topped with vegetables.  I would chose cauliflower crust over a dough crust, and not feel deprived in any way.  That is the goal–food that nourishes and sustains me, not merely entertains me.  This pizza is gluten free, and if you use vegan cheese, vegan and dairy free.  Feel free to mix
